The Caribbean islands are a diverse place, and their food traditions offer a lot of rich variety. One of the most popular dishes that we offer here is our curry chicken. Now, curry chicken is a dish that’s popular in many cultures, so in this article, we’ll be going over what makes our Caribbean curry chicken unique.
- Caribbean Curry Powder. In general, a lot of the differences in flavor between one culture’s curry and another will be found in the curry powder itself. While many grocery stores sell an item called curry powder, all such products are blends of various spices packaged together for convenience, and these blends will vary from brand to brand. What makes Caribbean curry powder distinct from other curry blends is that it typically uses no whole spices. Instead of toasting whole seeds and grinding them into powder, as is traditional in Indian curries, most Caribbean cooks start with ground curry powder and go from there. Caribbean curry powder also tends to have a higher proportion of sweet spices such as cinnamon, nutmeg, and clove, with a strong cumin flavor as well.
- Caribbean Cooking Methods. The other distinguishing factor in Caribbean curry chicken is the cooking methods used to prepare it. Caribbean curry chicken is first marinated in a blend of green seasoning, a sofrito made with a mixture of onion, green pepper, parsley, scallion, cilantro, lime juice, and ginger. Once marinated, the chicken is browned, then simmered with all the other ingredients until tender and ready to serve.
